Pumpkin-Spice Oat Cream (make ahead)

Steep oats

Place the rolled oats and warm plant-based milk in a heatproof container. Stir to combine, cover, and let steep for 20 minutes to soften and infuse. If short on time, blend immediately and strain; steeping yields a creamier result.

Blend

After steeping, add the soaked oats and milk to a blender along with maple syrup, pumpkin puree, cinnamon, ginger, nutmeg, allspice, and a pinch of salt. Blend on high for 30–45 seconds until smooth and emulsified.

Strain (optional)

For a silkier cream, strain the blended mixture through a fine-mesh sieve or nut-milk bag into a jar, pressing to extract as much liquid as possible. Discard or reserve the pulp for baking.

Cool and store

Refrigerate the pumpkin-spice oat cream for at least 30 minutes before using. It will thicken slightly when chilled. Keeps in the refrigerator for up to 3–4 days; shake/stir before measuring.

Cocktail Preparation

Prepare glass: If using the optional toasted oat rim, toast 1–2 tablespoons of rolled oats in a dry pan over medium heat until golden and fragrant. Allow to cool, then crush coarsely. Wet the rim of a chilled coupe or rocks glass with a little maple syrup or lemon juice, then dip into the crushed oats to coat. Chill the glass while you mix the cocktail.

Build and shake: Into a cocktail shaker add cognac (2 fl oz), crème de cacao (0.75 fl oz), pumpkin-spice oat cream (1.25 fl oz), fresh lemon juice (0.5 fl oz), maple syrup (0.25 fl oz) and 2 dashes of Angostura bitters. Fill the shaker with ice (about 1 cup).

Dry shake (optional for extra froth): Seal the shaker and shake vigorously without ice for 10 seconds to help emulsify the oat cream and create a silkier texture. Then add ice and shake hard for 12–15 seconds until well chilled and slightly frothy.

Double strain and serve: Double-strain the cocktail into the chilled prepared glass to remove small ice shards and any oat solids. The drink should be silky, lightly tan in color, with a frothy top.

Finish: Lightly dust the froth with freshly grated nutmeg to taste. Optionally float a thin cinnamon stick or twist of orange peel for aroma. Serve immediately.
