Method
Peri-Peri Marinade
Prepare chilies and aromatics
Remove stems from bird's eye chilies (keep seeds for more heat or remove some for milder flavor). Roughly chop chilies and red bell pepper so they blend evenly. Smash or roughly chop garlic cloves.
Blend marinade
Add chilies, chopped red bell pepper, garlic, lemon juice, red wine vinegar, olive oil, smoked paprika, oregano, cumin, sea salt, black pepper, and honey (if using) to a blender or food processor. Blend until smooth, pausing to scrape down sides. The marinade should be a pourable, slightly thick sauce. Taste carefully (use a small amount) and adjust salt, honey, or lemon if needed.
Thin if necessary
If the marinade is too thick to coat wings easily, add 1-2 tablespoons of water or additional olive oil and pulse again to reach a smooth, slightly runny consistency.
Chicken Wings
Prepare wings
Pat the chicken wings dry with paper towels. Trim any excess skin or tips if desired. Place wings in a large bowl or resealable plastic bag. Sprinkle coarse sea salt and black pepper over the wings and toss to distribute evenly.
Marinate
Pour about two-thirds of the peri-peri marinade over the wings, reserving one-third for basting and finishing. Massage the marinade into the wings so each piece is well coated. Cover and refrigerate for at least 2 hours, preferably 6–12 hours or overnight for best flavor penetration.
Bring to room temperature
Remove wings from the refrigerator 20–30 minutes before cooking so they come closer to room temperature. Preheat oven or grill during this time.
Oven method — roast
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top. Arrange wings in a single layer on the rack. Brush or drizzle with a little olive oil. Roast for 25–30 minutes, turning once halfway through. For extra crispness, broil 2–4 minutes at the end—watch closely to avoid burning. During the last 8–10 minutes, baste with the reserved marinade and continue roasting until wings register 165°F (74°C) and skin is nicely charred in spots.
Grill method — direct heat
Prepare grill for medium-high direct heat (about 400–450°F/200–230°C). Oil the grates. Place wings directly over heat and grill 10–12 minutes per side with lid closed, turning every 6–8 minutes to avoid flare-ups. During the last 6–8 minutes baste with reserved marinade and move wings to a cooler part of the grill if flare-ups occur. Cook until internal temperature reaches 165°F (74°C) and skin is crisp and charred.
Alternative — air fryer
Preheat air fryer to 400°F (200°C). Arrange wings in a single layer (work in batches if needed). Air fry 20–24 minutes, shaking or turning once halfway through. In the last 4–6 minutes brush with reserved marinade to build a glaze and crisp up.
Finishing & Serving
Storage
Store leftover cooked wings in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F (190°C) oven for 8–10 minutes or in an air fryer at 350°F (175°C) for 5–7 minutes to restore crispness.
