Method
Prime Rib Preparation
Roast the Prime Rib
Preheat your oven to 450°F (230°C). Season the prime rib roast generously with kosher salt, black pepper, garlic powder, onion powder, and fresh rosemary. Rub the olive oil all over the roast. Place the roast in a roasting pan and roast for 20 minutes. Then, lower the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.
Rest the Meat
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
Au Jus Preparation
Make the Au Jus
In a saucepan, combine the beef broth, Worcestershire sauce, and thyme. Bring to a simmer over medium heat and let it cook for about 10-15 minutes to enhance the flavors.
Sandwich Assembly
Assemble the Sandwich
Slice the rested prime rib thinly. Spread mayonnaise on the inside of the baguette or ciabatta rolls. Layer the sliced prime rib on the rolls and serve with a small bowl of au jus on the side for dipping. Serve with fresh fries.
