Prepare fruit purées (if not using ready purée)

If using fresh fruit, pit and chop 1 ripe apricot and about 1/4 medium ripe mango. Purée separately in a blender until very smooth. Strain through a fine mesh sieve into a container to remove fibers. Measure out the required amounts: 1 oz apricot purée and 0.75 oz mango purée.

Add the Suntory Toki (1 oz) and Nikka/Ichiro whisky (1 oz) to a cocktail shaker.

Add the apricot purée (1 oz), mango purée (0.75 oz), fresh lime juice (0.75 oz), and demerara syrup (0.5 oz) to the shaker. If using apricot liqueur, add 0.25 oz now for extra depth.

Add 2 dashes of Angostura bitters to the shaker. The bitters will help meld the fruit and whisky flavors.

Fill the shaker with ice (about 1 cup or enough to three-quarters fill the shaker).

Shake vigorously for 12–18 seconds until the outside of the shaker is very cold and the mixture is well emulsified (this helps marry the whisky with the fruit purées).

Double-strain the cocktail through a fine-mesh strainer into a chilled coupe or Nick & Nora glass to remove ice shards and any fruit solids. If you prefer a more rustic texture, single strain is acceptable.

Inspect taste: if the cocktail needs more brightness, add a few drops (about 1/8 oz) more lime juice; if it needs more sweetness, add 1/4 oz more syrup. Stir briefly with a bar spoon to integrate any adjustment.

Garnish & Serve

Garnish the cocktail with a dehydrated apricot slice or fresh apricot wedge clipped to the rim, and place a small mint sprig or micro mint on top to add an aromatic lift.

Optionally, express a lime wheel over the drink (squeeze the oils across the surface) and drop it in for an extra citrus note.

Serve immediately. The recipe yields one balanced, fruit-forward whisky cocktail designed to showcase the delicate Japanese whisky (Suntory Toki) and the richer Nikka/Ichiro blend with apricot and mango fruit notes.
