Crust Preparation

Make the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set and slightly golden. Remove from the oven and let cool.

Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, sour cream, and vanilla extract, mixing until combined.

Add the Eggs

Add the eggs one at a time, mixing on low speed just until incorporated. Be careful not to overmix.

Baking

Bake the Cheesecake

Pour the filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.

Cool and Chill

Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.

Before serving, top with fresh berries, a sprinkle of powdered sugar, and mint leaves if desired.

Carefully remove the cheesecake from the springform pan, slice, and serve chilled.
