Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix Crust Ingredients

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Press Crust into Pan

Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Make sure to pack it down evenly.

Bake the Crust

Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and let it cool slightly.

Beat Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Vanilla

Gradually add the granulated sugar and vanilla extract to the cream cheese, beating until well combined.

Incorporate Sour Cream

Mix in the sour cream until fully incorporated.

Add Eggs

Add the eggs, one at a time, beating well after each addition. Make sure not to overmix.

Stir in Flour

Gently fold in the all-purpose flour until just combined.

Pour Filling into Crust

Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

Bake Cheesecake

Bake in the oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.

Cool and Chill

Turn off the oven and crack the oven door. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
