Method
Cooking Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water for later use.
Grilling Chicken
Prepare the Chicken
While the pasta is cooking, season the chicken breasts with olive oil, salt, black pepper, and garlic powder on both sides.
Grill the Chicken
Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes before slicing.
Making Alfredo Sauce
Melt the Butter
In a large skillet over medium heat, melt the butter. Add minced garlic cloves and sauté for about 1 minute until fragrant.
Add Cream and Cheese
Pour in the heavy cream and bring to a gentle simmer. Gradually whisk in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to achieve desired consistency.
Combine with Pasta
Add the drained fettuccine pasta to the sauce and toss to coat evenly. If needed, adjust the seasoning with salt and pepper.
Serve
Plate the pasta and top with sliced grilled chicken. Garnish with chopped fresh parsley and extra Parmesan if desired.
