Combine Ingredients

In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, green onions, cilantro, jerk seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Fill the Wrappers

Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Be careful not to overfill.

Roll and Seal

Fold the corner closest to you over the filling, then fold in the sides and roll away from you to seal the egg roll. Use a little water on the edges to help seal if necessary.

Repeat

Continue the process with the remaining wrappers and filling until all are filled and sealed.

Heat Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry Egg Rolls

Carefully add the egg rolls to the hot oil in batches. Fry until they are golden brown and crispy, about 3-4 minutes per side. Use tongs to turn them for even cooking.

Drain

Once cooked, remove the egg rolls from the oil and place them on a paper towel-lined plate to drain any excess oil.
