Prepare the Filling
In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in ground beef, cinnamon, mint, salt, and pepper. Cook until the beef is browned. Add the rice and mix well. Pour in 1 cup of water, bring to a simmer, cover, and cook for about 15 minutes until the rice is tender. Remove from heat and let cool.
Prepare Grape Leaves
If using jarred grape leaves, rinse them under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for 2-3 minutes until soft.
Roll the Dolmas
Lay a grape leaf on a flat surface, vein side up. Place about 1 tablespoon of the filling near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat until all filling is used.
Serve
Serve warm with a side of yogurt for dipping and garnish with fresh mint if desired.
