Prepare the Oysters

Rinse the fresh oysters under cold water to remove any sand or debris. Use a brush if necessary.

Shuck the Oysters

Using an oyster knife, carefully shuck each oyster by inserting the knife into the hinge and twisting to open. Discard the top shell and place the oysters on a serving plate with the deeper shell side down.

Arrange lemon wedges around the oysters, and serve the mignonette sauce and Tabasco sauce on the side.
