Preparation of Chicken Filling

In a skillet over medium heat, add a splash of oil and sauté the diced onion until translucent, about 3-5 minutes.

Add minced garlic and cook for an additional minute until fragrant.

Stir in the shredded chicken, cumin, salt, and black pepper. Cook for about 5-7 minutes until heated through. Remove from heat and set aside.

Assembling Enchiladas

Preheat your oven to 350°F (175°C).

On a flat surface, warm the corn tortillas slightly to make them pliable.

Spoon a generous amount of the chicken filling into each tortilla, roll them up, and place seam-side down in a baking dish.

Once all tortillas are filled and placed in the baking dish, pour the Salsa Ahora evenly over the top.

Sprinkle shredded cheese over the salsa, covering the tortillas completely.

Baking

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

Serving

Remove from the oven and let cool for a few minutes.

Serve hot, topped with a dollop of sour cream.
