Cook the Chicken or Steak

In a skillet, heat olive oil over medium heat. Add diced chicken or steak, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes, or until the meat is heated through and slightly browned. Remove from heat and set aside.

Prepare the Tortillas

Warm the flour tortillas in a separate skillet over low heat for about 30 seconds on each side until pliable.

Assemble the Quesadilla

On one half of each warmed tortilla, layer the cooked chicken or steak, shredded cheese, cooked rice, and black beans. Fold the other half of the tortilla over to create a half-moon shape.

Cook the Quesadilla

In the same skillet, add a little more olive oil if necessary. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Serve

Once cooked, remove the quesadilla from the skillet, cut into wedges, and serve with guacamole on the side.
