Preparation of Black Beans
Rinse and Soak Beans
Rinse the black beans under cold water and soak them in water for at least 4 hours or overnight for best results.
Cook Beans
In a large pot, add the soaked beans, 4 cups of water, salt, and ground cumin. Bring to a boil over medium-high heat, then reduce to low heat and simmer covered for about 1 to 1.5 hours, or until the beans are tender. Stir occasionally and add more water if necessary.
Assembly and Serving
Prepare the Toppings
While the beans are cooking, prepare the toppings. Wash and chop the lettuce into bite-sized pieces, and set aside. If necessary, prepare the guacamole by mashing ripe avocados and mixing in lime juice, salt, and any desired seasonings.
Assemble the Dish
In a large bowl or plate, start with a base of the sautéed black beans. Layer on the shredded cheese, followed by salsa gringa, chopped lettuce, and finally, a generous scoop of guacamole on top.
Serve
