Preparation
Roast the Eggplant
Preheat the oven to 400°F (200°C). Cut the eggplants in half lengthwise and place them cut-side down on a baking sheet lined with parchment paper. Roast for 30-40 minutes until the flesh is soft and the skin is charred.
Cool the Eggplant
Once roasted, remove the eggplants from the oven and let them cool for about 10-15 minutes. Then scoop out the flesh and discard the skin.

Taste the baba ganoush and adjust seasoning with more salt or lemon juice if desired.
Serve
Transfer the baba ganoush to a serving bowl. Drizzle with olive oil and garnish with additional parsley or mint if desired. Serve with pita bread or fresh vegetables.
