Prepare the cracked wheat

In a bowl, soak the cracked wheat in warm water for about 30 minutes or until it softens. Drain well and set aside.

Chop the vegetables

Finely chop the fresh parsley, green onions, and dice the tomatoes. Make sure to remove any excess moisture from the tomatoes to avoid sogginess.

In a large mixing bowl, combine the soaked and drained cracked wheat, chopped parsley, green onions, and diced tomatoes.
