Soup Preparation
Cook the Vegetables
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
Add Garlic and Spices
Add the minced garlic, cumin powder, turmeric powder, salt, and black pepper to the pot. Stir and cook for an additional 1-2 minutes until fragrant.
Add Lentils and Broth
Add the red lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 20-25 minutes, or until the lentils are tender.
Blend the Soup
Using an immersion blender, blend the soup until smooth. If you prefer a chunky texture, only blend half of the soup and leave the rest whole.
Finish with Lemon Juice
Stir in the lemon juice and adjust the seasoning if necessary. Keep warm while you prepare the pita chips.

Prepare the Pita
Preheat the oven to 375°F (190°C). Cut each pita bread into triangles.
Bake the Chips
Spread the coated pita triangles on a baking sheet and bake for 10-12 minutes, or until golden and crispy.
