Marinate the Chicken

In a bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger. Add the chicken breast and ensure it is well-coated. Cover and refrigerate for at least 30 minutes.

Chop the Vegetables

While the chicken is marinating, chop the bell pepper and red onion into bite-sized pieces.

Cook the Chicken

Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Cook for about 6-7 minutes on each side until fully cooked through. Remove from the skillet and let it rest.

Sauté the Vegetables

In the same skillet, add the chopped bell pepper and red onion. Sauté for about 4-5 minutes until they are softened. Add the reserved marinade and simmer for 2 minutes.

Combine and Serve

Slice the cooked chicken and add it back to the skillet with the sautéed vegetables. Stir to combine and heat through for another 2 minutes. Serve hot, garnished with fresh cilantro and lime wedges.
