Prepare the Wort

In a large pot, heat the water to a boil. Add the pale malt and caramel malt, stirring well. Let it steep for 30 minutes on low heat, then remove the grains and bring the liquid back to a boil.

Add Hops

Once boiling, add the hops. Boil for another 30 minutes, stirring occasionally.

Cool the Wort

After boiling, cool the wort rapidly using an immersion chiller or by placing the pot in an ice bath.

Fermentation

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the non-alcoholic yeast on top and seal with an airlock. Allow it to ferment at room temperature for 2-3 days.

Carbonation

Once fermentation is complete, add priming sugar and gently mix. Bottle the beer and let it carbonate for an additional 5-7 days.

Add Zest and Serve

Before serving, add lemon and orange zest for added aroma and flavor. Chill well and pour into a glass. Enjoy your non-alcoholic IPA!
