Fish Preparation

Blacken the Fish

In a bowl, mix chili powder, cumin, paprika, garlic powder, salt, and black pepper. Rub the spice mixture all over the haddock fillets. Heat olive oil in a skillet over medium-high heat and cook the fish for about 3-4 minutes on each side or until blackened and cooked through. Squeeze lime juice over the fish.

Make Guacamole

In a bowl, mash the ripe avocados. Add lime juice, minced garlic, chopped cilantro, and salt. Mix well to combine.

Mango Lime Chili Sauce Preparation

Prepare Mango Sauce

In a blender, combine diced mango, lime juice, chili powder, honey, and a pinch of salt. Blend until smooth.

Pickled Vegetables Preparation

Pickle the Veggies

In a saucepan, combine white vinegar, sugar, and salt. Bring to a simmer. Add julienned carrots and sliced radishes. Remove from heat and let it sit for at least 30 minutes to pickle.

Assemble Tacos

Build Your Tacos

Warm the corn tortillas in a skillet. Layer with blackened fish, guacamole, pickled vegetables, and drizzle with mango lime chili sauce. Serve immediately.
