Prepare the Cocktail

In a cocktail shaker, combine the Bombay Gin, fresh lemon juice, simple syrup, and egg white. Do not add ice yet.

Dry Shake

Shake the mixture vigorously without ice for about 15 seconds to emulsify the egg white.

Add Ice and Shake Again

Add ice to the shaker and shake again for another 15-20 seconds until well chilled.

Strain and Serve

Strain the mixture into a chilled coupe or rocks glass.

Add a couple of dashes of Angostura bitters on top and garnish with a lemon twist.
