Prepare the Bacon

Cook the Pork Belly

Preheat your oven to 375°F (190°C). Season the pork belly with salt and black pepper. Place it on a baking sheet and roast for 30-40 minutes or until crispy, flipping halfway through. Once cooked, remove it from the oven and let it cool before slicing it into thin strips.

Prepare the Vegetables

Wash and Slice

While the bacon is cooking, wash the lettuce leaves and pat them dry. Tear the lettuce into bite-sized pieces. Slice the tomato into thick rounds.

Make the Cornmeal Dust Bread

Prepare the Dough

In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. In a separate bowl, mix cornmeal, flour, and salt. Gradually add the yeast mixture to the dry ingredients, mixing until a dough forms. Knead for about 10 minutes until smooth.

Let it Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape and Bake

Preheat your oven to 375°F (190°C). Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan and let it rise for another 30 minutes. Bake for 25-30 minutes until golden brown. Let cool before slicing.

Assemble the BLT

Spread Condiments

Spread a tablespoon of mayonnaise and mustard on one side of two slices of the cornmeal dusted bread.

Layer Ingredients

On one slice of the prepared bread, layer the bacon strips, followed by the lettuce and tomato slices. Top with the second slice of bread, condiment side down.

Serve

Cut the sandwich in half and serve immediately. Enjoy your homemade BLT!
