Method

Cooking the Burger Patty

Prepare the Patty

In a bowl, combine the dry-aged prime beef, salt, and black pepper. Mix gently until just combined, avoiding overworking the meat.

Shape the Patties

Divide the mixture into two equal portions and shape them into patties, about 1 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes. Place a slice of pepper jack cheese on one patty and cheddar cheese on the other during the last minute of cooking to melt.

Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 4-5 minutes. Remove from skillet and let drain on paper towels.

Fry the Egg

In the same skillet, crack the egg and fry it sunny-side up until the white is set but the yolk remains runny, about 2-3 minutes.

Assembling the Burger

Toast the Buns

If desired, lightly toast the burger buns on the grill or in a toaster until golden brown.

Build the Burger

On the bottom half of each bun, layer lettuce, followed by the cooked burger patty with melted cheese, crispy bacon, fried egg, tomato slices, ketchup, and mustard. Top with the other half of the bun.

Serve

Cut the burgers in half if desired and serve immediately, enjoying the rich flavors and textures.
