Prepare the Ingredients
Start by preheating your oven to 400°F (200°C). Slice the Medjool dates lengthwise on one side to create an opening. Remove the pits and set the dates aside.
Make the Filling
In a mixing bowl, combine the chorizo sausage (remove the casing if using links), cream cheese, finely chopped piquillo peppers, and chopped fresh parsley. Mix well until all ingredients are thoroughly combined.
Stuff the Dates
Using a small spoon or your fingers, carefully stuff each date with the chorizo and cream cheese filling, ensuring they are filled to the top.
Wrap with Bacon
Cut the bacon strips in half and wrap each stuffed date with a half strip of bacon. Secure with a toothpick if necessary.
Bake the Dates
Place the wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the bacon is crispy and golden brown.
Serve
Remove from the oven and let cool slightly. Serve warm as an appetizer or snack.
