Prepare the Rice

Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

Cook the Rice

In a medium saucepan, combine the soaked rice with 2 cups of milk. Cook over medium heat, stirring frequently, until the rice is tender and the mixture thickens, about 15-20 minutes.

Prepare the Pudding Base

In another saucepan, whisk together the remaining 2 cups of milk, sugar, cornstarch, vanilla extract, ground cinnamon, and a pinch of salt. Cook over medium heat until the mixture starts to thicken, stirring constantly.

Combine Rice and Pudding Base

Once the rice is cooked and the pudding base is thickened, combine the two mixtures. Stir well and continue to cook for an additional 5 minutes, allowing the flavors to meld.

Add Citrus Zest

Remove the pudding from the heat and stir in the orange and lemon zest. Let it cool for a few minutes.

Serve the Pudding

Spoon the sahlab rice pudding into serving bowls. Garnish with finely chopped pistachios on top before serving. You can also sprinkle additional cinnamon if desired.
