Chill glass
Place a champagne flute or coupe in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to ensure the drink stays bright and effervescent.
Build base
In a mixing glass or small cocktail shaker filled with ice, combine 1 tablespoon St. Germain, 1 1/2 tablespoons Grey Goose La Poire vodka, and 1/4 tablespoon fresh lemon juice. Stir gently for 10–15 seconds to lightly chill and dilute the mixture.
Strain
Discard the ice or water from the chilled champagne flute. Strain the mixed base into the chilled flute, leaving room for the sparkling wine (about one-third of the glass).
Top with champagne
Carefully top the flute with 3 ounces of chilled Champagne or dry sparkling wine. Pour slowly down the side to preserve bubbles and avoid overflow. Give a very gentle stir (1 turn) if needed to integrate.
Garnish and serve
Express a lemon twist over the drink to release oils and drop it (or float a thin pear slice) on the surface. Serve immediately while effervescent.
