Prepare the Tuna Mixture

In a medium bowl, combine the drained albacore tuna and horseradish mayo. Season with salt and black pepper to taste. Mix well until combined.

Assemble the Sandwich

Take two slices of Zeppole cheddar-scallion bread and place half of the tuna mixture on each slice. Top with shredded cheddar cheese. Place the remaining slices of bread on top to make two sandwiches.

Toast the Sandwiches

In a skillet over medium heat, melt 1 tablespoon of butter. Place one sandwich in the skillet and cook until the bread is golden brown and the cheese starts to melt, about 3-4 minutes. Flip the sandwich and add the remaining butter to the skillet. Cook until the other side is golden brown and the cheese is fully melted, another 3-4 minutes.

Serve

Remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve immediately.
