Prepare breads
Slice the rustic country bread into 1/2-inch slices. Lightly toast 8–10 slices until just golden and slightly crisp at the edges; keep remaining slices untoasted. Arrange tortas de aceite and Mitica crackers in a pile for variety.
Cheeses
Bring cheeses to temperature
Remove all cheeses from refrigeration 30–45 minutes before serving so flavors open up and textures soften slightly.
Cut and present cheeses
Aurora Manchego: cut into 1/4-inch wedges or triangular slices, fan on board (approx. 200 g). Le Caseria: leave a small wedge intact and cut the remainder into 1/2-inch slices for easy picking (150 g). Valdeon blue: crumble or present as a small log or wedge with a cheese knife nearby (120 g). Queso Albinez: cut into bite-sized cubes or thin wedges (120 g). Idiazabal: slice thinly against the grain into small triangles to show smoky marbling (150 g). Place cheeses in separate zones on the board with space for accompaniments.
Charcuterie
Arrange cured meats
Fan thin slices of Fermín Ibérica Jamón into loose rosettes to create height (120 g). Arrange chorizo slices in overlapping rounds or small stacks (120 g). Spoon the sobrasada into a small bowl or smear a small pool on a piece of parchment and provide a butter knife for spreading (100 g). Place charcuterie near breads and crackers for easy assembly.

Place condiments
In small bowls place whole grain mustard (3 tbs), sherry gelée (80 g), and a drizzle of honey (2 tsp). Add flaky sea salt near cheeses to season if desired. Fill small bowls with olives (120 g) and toasted Marcona almonds (80 g). Scatter pickled zucchini/cornichons (120 g) and sliced pickled peppers (100 g) on the board in separate clusters.
Finish & garnish
Drizzle 2 tbs extra virgin olive oil lightly over exposed bread slices or a few pieces of cheese if desired. Sprinkle a small pinch of flaky sea salt over the Manchego and Idiazabal to enhance flavor. Garnish with thyme sprigs around the board for aroma and visual appeal.
Assemble & Serve
Position cheeses first, spaced across the board so guests can move from one to another. Place charcuterie near complementary cheeses (jamón beside Manchego or Idiazabal; chorizo beside Manchego or Queso Albinez; sobrasada near bread and tortas). Add bowls of condiments and small piles of bread/crackers around them. Scatter nuts and olives to fill gaps and provide texture contrast. Ensure each cheese has an appropriate knife or spreader. Taste-test a configuration and adjust for color balance and ease of reaching items.
