Prepare Pork Tenderloin

Season the Pork

Preheat the oven to 200°C (400°F). Rub the pork tenderloin with olive oil, minced garlic, rosemary, salt, and black pepper.

Roast the Pork

Place the seasoned pork on a roasting rack and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 63°C (145°F). Let it rest for 10 minutes before slicing.

Prepare Apple Demi Glaze

Cook the Apples

Peel and core the Okanagan apples, then chop them into small pieces. In a saucepan, combine the apples, chicken stock, honey, and apple cider vinegar. Simmer over medium heat for about 20 minutes until apples are soft.

Blend and Finish the Sauce

Using an immersion blender, puree the mixture until smooth. Stir in the butter until melted and combined. Adjust seasoning with salt if necessary.

Prepare Horseradish Mashed Potatoes

Boil the Potatoes

Peel the potatoes and cut them into chunks. Boil in salted water until tender, about 15-20 minutes. Drain well.

Mash the Potatoes

In a large bowl, mash the potatoes with butter, milk, prepared horseradish, and additional salt to taste until smooth and creamy.
