Method
Prep Tomatoes & Breading
Slice and season
Cut tomatoes into 1/2-inch thick slices. Pat slices dry with paper towels. Lightly season both sides with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper; set on a rack for 10 minutes to allow moisture to release, then blot again if needed.
Set up breading station
In three shallow bowls: (1) whisk together 1 cup all-purpose flour with 1/4 tsp of the salt and 1/4 tsp pepper; (2) whisk 1 cup buttermilk with 2 large eggs and 1 tsp hot sauce (optional) until combined; (3) combine 1/2 cup cornmeal and 1/2 cup panko (or 1 cup cornmeal if you prefer) in the third bowl. Place the prepared tomato slices nearby for efficient dredging.
Fry Tomatoes
Heat oil in a heavy skillet (cast iron preferred) over medium heat until it reaches 350°F (or a drop of batter sizzles immediately). You need about 1/2-inch depth of oil — roughly 1 cup in a 10-inch skillet. Working in batches to avoid crowding, dredge each tomato slice first in the flour (shake off excess), then dip in the buttermilk-egg mixture, then press into the cornmeal/panko mixture to coat fully. Let excess crumbs drop off.
Carefully lay coated tomato slices into the hot oil and fry 2–3 minutes per side, until golden brown and crisp. Adjust heat as needed to prevent burning; the oil should maintain roughly 325–350°F. Transfer fried slices to a wire rack set over a sheet pan (not paper towels) to keep crisp. If desired, finish a batch by adding 1 tbsp unsalted butter to the pan and spooning the foaming butter over the slices for extra richness. Keep warm in a 200°F oven while remaining batches fry.
Make Pimento Cheese
In a medium bowl, combine 1.5 cups freshly grated sharp cheddar, 2 oz softened cream cheese, 1/4 cup mayonnaise, 3 tbsp chopped roasted pimentos, 1/2 tsp Worcestershire sauce, 1/4 tsp smoked paprika, 1/8 tsp cayenne, 1/4 tsp kosher salt and 1/8 tsp black pepper. Stir or beat briefly until smooth but still slightly chunky — do not overblend; you want a spreadable, slightly textured cheese.
Taste and adjust seasoning: add more salt, a splash of hot sauce, or an extra tablespoon of mayo if you want creamier texture. Keep refrigerated until ready to assemble; bring to room temperature for easier spreading if time allows.
Cook Bacon & Dress Arugula
In a small bowl, whisk 1/2 tbsp lemon juice with 1/2 tbsp olive oil and 1/8 tsp salt. Toss 2 cups baby arugula lightly with the dressing just before assembly to avoid wilting.
Make Hot Honey
In a small saucepan over low heat, combine 1/4 cup honey and 1/2 tsp red pepper flakes. Warm gently, stirring, just until honey thins and the flavors infuse, about 2–3 minutes; do not boil. If you prefer a looser consistency, whisk in 1/2 tsp hot water and 1/2 tsp apple cider vinegar to thin and add brightness. Taste and adjust heat by adding more red pepper flakes or letting it steep longer off heat for a milder profile. Keep warm or at room temperature for drizzling.
Assemble
For each serving, place a fried green tomato slice on a plate or serving board. Spread about 2 tbsp pimento cheese on the tomato, layer a small handful (about 1/4 cup) of dressed arugula, then sprinkle roughly 1–2 slices' worth (about 1 tbsp) of crumbled bacon. Top with another fried green tomato slice to make a short stack, or leave open-faced if preferred.
Drizzle hot honey over the stacks — roughly 1/2 to 1 tsp per stack, more to taste. Finish with a light pinch of fine sea salt and a few microgreens or a small dollop (1 tbsp) extra pimento cheese as garnish.
Serve immediately while tomatoes are warm and crisp.
