Method
Fries Preparation
Cut and Soak Potatoes
Wash and cut the Russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.
Season the Fries
Remove the fries from the oil and place them on paper towels to drain excess oil. While hot, sprinkle with salt and black pepper to taste.
Housemade Ketchup
Blend Ingredients
In a blender, combine canned tomatoes, apple cider vinegar, brown sugar, onion powder, garlic powder, salt, and cayenne pepper.
Simmer Ketchup
Transfer the blended mixture to a saucepan and simmer over medium heat for about 20 minutes, stirring occasionally until slightly thickened.
Cool and Store
Let the ketchup cool before storing it in an airtight container in the refrigerator until ready to serve.

Mix Ingredients
In a bowl, mix together mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, and smoked paprika.
Adjust Seasoning
Season the drive-in sauce with salt to taste. Mix well and refrigerate until ready to serve.
