Marinate the Meats

In a bowl, combine olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. Mix well to create a marinade.

Prep the Meats

Add lamb cutlets, T-bone steak, pork loin, and ribs to the marinade. Ensure each piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.

Cooking

Grill the Meats

Preheat your charcoal grill to medium-high heat. Remove the meats from the marinade and let excess marinade drip off. Grill each type of meat for 4-6 minutes on each side, or until they reach your preferred doneness.

Prepare Flatbreads

While the meats are grilling, place the flatbreads on the grill for about 1-2 minutes on each side, just to warm and get grill marks.

Assembly

Plate the Dish

Once the meats are cooked, let them rest for a few minutes. Slice the meats into bite-sized pieces. Arrange the grilled meats on top of the warmed flatbreads.

Add Sides

Serve with grilled vegetables, tzatziki sauce, and hummus on the side for dipping.
