In a small bowl, mix together the olive oil, smoked paprika, garlic powder, dried thyme, salt, and black pepper. Brush this mixture generously over the cauliflower, ensuring even coverage.

Place the seasoned cauliflower over the open coals or grill. Roast for approximately 30-40 minutes, turning occasionally, until the outer layer is charred and the inside is tender. Use a skewer to check for tenderness.
