Method
Preparation
Prepare the Marinade (optional)
In a small bowl, combine soy sauce, honey, and lemon juice. Mix well.
Marinate the Chops (optional)
Place the pork rib eye chops in a resealable bag or shallow dish. Pour the marinade over the chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for better flavor.
Prepare the Seasoning
In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper.
Season the Chops
Remove the chops from the marinade if used, and pat them dry with paper towels. Rub the olive oil over both sides of each chop, then sprinkle the seasoning mix evenly on both sides.
Grilling
Preheat the Grill
Preheat your grill to medium-high heat, about 375°F to 400°F (190°C to 200°C).
Add the Rosemary
Place the fresh rosemary sprigs directly on the grill grates to infuse the chops with flavor while grilling.
Rest the Chops
Remove the chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute.
