Preparing the Ribs

Trim the Ribs

Trim excess fat from the beef ribs to ensure even cooking and better flavor absorption.

Apply the Dry Rub

In a bowl, mix together the brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Generously rub this mixture all over the beef ribs, ensuring they are evenly coated. Let the ribs sit at room temperature for at least 30 minutes.

Prepare the Smoker

Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before using.

Add the Wood Chips

Once the smoker is ready, drain the wood chips and add them to the smoker box or directly onto the coals, depending on your smoker type.

Smoke the Ribs

Place the beef ribs bone-side down on the smoker grate. Close the lid and smoke for about 5 to 6 hours, or until the internal temperature reaches 203°F (95°C).

Baste and Rest

During the last hour of smoking, you may baste the ribs with a mixture of your choice (optional). Once done, remove the ribs from the smoker and let them rest for at least 30 minutes before slicing.
