Potato Salad

Set your smoker to 225°F (107°C). Fill the smoker water pan with 1 cup water. If using wood chips, soak them for 20–30 minutes beforehand (optional for slower smoke release), then load 1/2 cup into the smoker box or on coals per manufacturer instructions.

Preheat and prepare smoker

If the bologna has a plastic casing, remove it. Pat the log dry with paper towels. Spread 1 tablespoon yellow mustard evenly over the outside of the bologna — the mustard acts as a binder so the rub adheres and it will not add a pronounced mustard flavor after smoking.

Prepare the bologna

Combine 2 tablespoons brown sugar, 1 teaspoon smoked paprika and 1 teaspoon black pepper in a small bowl. Press the rub evenly onto the mustard-coated bologna so it forms a thin, even coating.

Make and apply rub

Place the bologna on the smoker grate away from direct heat. Smoke at 225°F (107°C) for 90–120 minutes, rotating once if your smoker has hot spots. Because bologna is fully cooked, you're smoking for color and flavor — look for a deepened color, a slightly tacky bark from the sugar, and smoke aroma. If you have a meat thermometer, an internal temperature around 140°F (60°C) is sufficient for heated-through slices.

Smoke the bologna

Remove bologna from the smoker and let it rest 5–10 minutes. Using a sharp knife, slice the smoked log into 1/8–1/4-inch thick slices (aim for about 12–16 slices, depending on thickness). The thicker you slice, the meatier the bite; thinner slices will crisp more at the pan stage.

Rest and slice

While the bologna rests, spread 2 tablespoons mayonnaise evenly over 4 slices of bread (these will be the sandwich interiors). Spread 2 tablespoons yellow mustard over the other 4 slices (or split as preferred). Thinly slice the red onion; combine onion with 1/4 teaspoon salt and 1/8 teaspoon black pepper and toss briefly to soften flavor. Have pickle slices and shredded lettuce ready.

Prepare condiments and produce

Heat a large skillet or griddle over medium heat. When hot, add 1 tablespoon of the butter and let it melt and coat the pan. Add several slices of the smoked bologna in a single layer (do not overcrowd). Sear 1–2 minutes per side until the edges get golden and slightly crisp and the meat warms through. Repeat in batches, adding remaining butter as needed (total butter used ~4 tbs). If you'd like cheese melted on the bologna, place a cheddar slice on the bologna for the final 30–45 seconds of searing and cover the pan briefly to melt.

Pan-sear smoked bologna

On the mayonnaise-spread bread slice, layer 2–3 warm smoked bologna slices (with or without cheese), 2 pickle slices, a few rings of the seasoned red onion, and a small handful of shredded lettuce (if using). Top with the mustard-spread bread slice. Repeat to make 4 sandwiches.

Assemble sandwiches

If you prefer a toasted exterior, butter the outsides of assembled sandwiches with remaining butter and place on the skillet over medium heat. Grill 2–3 minutes per side until bread is golden brown and cheese fully melted. Transfer to a cutting board, let rest 1 minute, then cut in half and serve hot.

Grill sandwiches (optional) and finish

Serve each smoked bologna sandwich immediately with extra pickles or chips. Any leftover slices of smoked bologna keep well refrigerated for 3–4 days and can be reheated in a skillet.

Soak wood chips in water for 20–30 minutes if using chips (skip soaking if using chunks). Preheat your smoker to a steady 225°F (107°C). Place a small water pan in the smoker and fill with 2 cups water to help maintain humidity during the cook.

Prepare smoker and wood

Remove the bologna from packaging and pat dry with paper towels. Trim a thin slice from each end so the loaf sits flat. Lightly score the surface of the bologna in a shallow crosshatch (about 1/8" deep) across the top and sides — this helps the rub and glaze stick and encourages caramelization.

Brush the entire surface of the bologna with 3 tbs yellow mustard. The mustard won't make the bologna taste mustardy when cooked; it acts as a sticky binder to hold the dry rub and to help the glaze adhere.

Apply mustard binder

In a small bowl combine 0.5 cup light brown sugar, 2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp kosher salt, 1 tsp black pepper, and 0.25 tsp cayenne pepper. Mix thoroughly. Press the rub evenly over all mustard-coated surfaces of the bologna, pressing with your hands so it adheres into the scores.

Make and apply the dry rub

Place the rubbed bologna directly on the smoker grate. Add your soaked wood chips or chunks to the smoker's heat source and maintain 225°F (107°C). Smoke undisturbed for 60 minutes to allow smoke penetration and formation of a light bark.

While the bologna begins smoking, whisk together 3 tbs pure maple syrup and 1 tbs Worcestershire sauce in a small bowl. Set aside for basting during the final stage of smoking.

Prepare the glaze

After the first 60 minutes, baste the bologna with a light coat of the maple-Worcestershire glaze. Continue smoking for another 30–45 minutes, basting with glaze every 10–15 minutes during the last 30 minutes so the glaze builds into a glossy, slightly sticky surface. Total smoke time should be about 90–120 minutes depending on your smoker and how dark/crispy you want the edges. The bologna is pre-cooked so you are aiming for color, glaze set, and smoke flavor rather than a specific internal temperature.

Continue smoking and baste

For a crisper, caramelized exterior, heat a large cast-iron or heavy skillet over medium-high heat. Add 1 tbs vegetable oil and 1 tbs butter (optional) until shimmering. Transfer the smoked bologna to the skillet and sear 1–2 minutes per side until edges brown and glaze crisps — work quickly so the interior doesn't overheat. Use tongs to hold the loaf upright to brown the rounded sides if desired.

Optional quick-pan sear

Remove the bologna from heat and let it rest on a cutting board for 8–10 minutes. This helps the glaze set and makes slicing neater. Slice into 1/4"–1/2" thick rounds for sandwiches or thinner for sliders. If serving on buns, optionally toast the buns in the same skillet for 30–60 seconds.

Assemble smoked bologna sandwiches on buns (optional). Add condiments and toppings of your choice (mustard, pickles, cheese, onions). Serve warm. Leftovers keep in the refrigerator for 3–4 days and reheat gently in a skillet or oven to preserve the crust.

Combine finely ground coffee, smoked paprika, ground cumin, brown sugar, kosher salt, and black pepper in a small bowl. Mix thoroughly to create an even rub.

Make the dry rub

Pat the flank steak dry with paper towels. Rub olive oil over both sides of the steak, then press the dry rub evenly into both sides so the mixture forms a thin coating.

Season the steak

Heat a heavy skillet (cast iron) or grill to high heat (medium-high on a gas grill). When very hot, sear the steak 3-5 minutes per side, until a deep brown crust forms. For flank steak, aim for medium-rare (internal temp 130-135°F / 54-57°C). Exact time depends on thickness; use an instant-read thermometer.

Cook the steak

Transfer steak to a cutting board and let rest, loosely tented with foil, for 8-10 minutes. Slice thinly across the grain into 1/8–1/4-inch slices. Resting and slicing against the grain ensures tenderness.

Peel and thinly slice the red onion into rings or half-moons. Place the slices in a heatproof bowl or jar that will hold about 2 cups.

Prepare the onions

In a small saucepan combine apple cider vinegar, water, sugar and salt. Bring to a gentle simmer over medium heat, stirring until sugar and salt dissolve, about 1-2 minutes.

Make quick pickle brine

Pour the hot brine over the sliced onions, pressing them down so they are submerged. Let cool at room temperature 10-15 minutes, then refrigerate if you have extra time. The onions will be nicely pickled and ready to use in about 15 minutes.

In a small bowl combine mayonnaise, minced garlic, lemon juice, hot sauce, and chopped parsley. Whisk until smooth and homogenous.

Combine aioli ingredients

Season the aioli with 1/2 tsp salt and 1/4 tsp black pepper, taste and adjust salt, pepper or hot sauce as desired. Refrigerate until assembly so the flavors meld.

Split ciabatta rolls horizontally. Lightly butter the cut faces of each roll (about 1/2 tbs per side).

Prepare the rolls

Heat a skillet over medium heat or place under a broiler. Toast the buttered cut sides until golden brown and crisp, about 1-2 minutes per side in a skillet or 1-3 minutes under a broiler. Keep an eye on them to prevent burning.

Toast the bread

Place 1-2 slices of sharp cheddar on the bottom half of each toasted roll while warm so the cheese softens slightly.

Add cheese

Rinse and spin dry the arugula. Keep it chilled until assembly. Have pickled jalapeño slices ready if using.

Generously spread about 1 to 1.5 tbs of the spicy herb aioli on both the bottom and top cut faces of each toasted roll.

On the bottom half (over the softened cheddar) arrange several slices of the sliced flank steak in an even layer. Top the steak with a few tablespoons of pickled onions (drain excess liquid), a handful (about 1/2 cup) of arugula, and a couple of pickled jalapeño slices if using.

Layer the sandwich

Cap with the top roll, press gently, and slice the sandwich in half. Serve immediately while the steak is warm and bread is crisp. Provide extra aioli and pickled onions on the side if desired.

Preheat the oven to 400°F (200°C). Position a rack in the center of the oven.

Preheat oven

Scrub the russet potatoes well and pat dry. Pierce each potato 6–8 times with a fork to allow steam to escape.

Rub each potato all over with the olive oil, then sprinkle evenly with the kosher salt so the skins season and crisp while baking.

Place the potatoes directly on the oven rack (or on a baking sheet for easier cleanup). Bake 55–65 minutes, until skins are crisp and a paring knife slides into the center easily. Timing will depend on potato size; medium potatoes typically take ~60 minutes.

While potatoes bake, shred the cooked chicken into bite-size pieces and set aside. If using chilled rotisserie chicken, warm lightly in a skillet if you prefer a hot filling (optional).

Prepare chicken

In a medium skillet over low heat, melt the unsalted butter. Add the softened cream cheese and stir until it begins to smooth and combine with the butter (about 1–2 minutes).

Soften base

Stir in the sour cream until a creamy mixture forms. Add the shredded cheddar, garlic powder, ground black pepper, and 1/2 tsp salt. Stir until the cheese is melted and the mixture is homogeneous. Keep the heat low to avoid separation.

Add the shredded chicken and sliced green onions to the cheese mixture. Stir to coat the chicken thoroughly and warm through (2–3 minutes). Taste and adjust seasoning with additional salt or pepper if needed. Remove from heat and keep warm until potatoes are ready.

Cook the bacon while the potatoes bake: fry in a skillet over medium heat until crisp (about 8–10 minutes), drain on paper towels, then chop into small pieces. Alternatively use pre-cooked bacon.

When potatoes are done, remove from oven and let rest 5 minutes until cool enough to handle. Cut a lengthwise slit in the top of each potato and gently push the ends toward each other to open the cavity.

Use a spoon to loosen a little of the potato flesh (leave some for structure) and transfer the loosened flesh to the warm chicken-cheese mixture. Fold the potato into the filling to make it extra creamy. If desired, stir in a splash of milk (1–2 tbsp) to adjust consistency.

Spoon the chicken-potato filling back into each potato cavity, mounding slightly. Sprinkle an additional 2 tbsp of shredded cheddar on top of each filled potato.

Place the filled potatoes on a baking sheet and return to the oven on broil (or 425°F/220°C if no broil) for 2–4 minutes, watching carefully, until the extra cheddar melts and begins to brown lightly.

Remove from oven. Top each potato with chopped bacon, a dollop of sour cream (about 1 tbsp per potato), chopped chives, and a light sprinkle of smoked paprika (if using). Serve immediately.

Place the thinly sliced red onion in a heatproof bowl or jar. In a small saucepan combine 1/2 cup apple cider vinegar, 1/2 cup water, 1 tbsp sugar and 1/2 tsp salt. Bring just to a simmer to dissolve the sugar and salt, then pour the hot brine over the onions. Press the onions down so they are submerged, let cool to room temperature (about 10–15 minutes) then refrigerate while you prepare the rest of the salad. Onions will be ready in 15 minutes but develop more flavor if refrigerated 30+ minutes.

Quick-pickle the onions

In a small skillet over medium heat melt 1 tbsp butter. Add 1/2 cup pecans and 2 tbsp brown sugar, stirring constantly to coat. Cook 2–4 minutes until sugar melts and pecans are glossy and toasted, then sprinkle with 1/4 tsp salt. Transfer to a sheet of parchment to cool and separate (they will crisp as they cool).

Make candied pecans

In a bowl whisk 2 tbsp olive oil, 2 tbsp lime juice, 1 tbsp honey, 1 tsp smoked paprika, 1/2 tsp ground cumin, 2 minced garlic cloves, 1 tsp salt and 1/2 tsp black pepper. Add the 2 chicken breasts, turning to coat. Let marinate at room temperature for 15 minutes or refrigerate up to 2 hours.

Marinate the chicken

Heat a grill pan or skillet over medium-high heat (lightly oil the grill/griddle). Remove excess marinade and cook chicken 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and the exterior is nicely charred. Transfer to a cutting board and rest 5 minutes, then slice thinly across the grain.

Cook the chicken

Pat the sliced okra dry with paper towels (moisture causes sogginess). In a shallow bowl combine 1/2 cup cornmeal, 1/4 cup all-purpose flour, 1 tsp salt and 1/2 tsp black pepper. Heat a 10" skillet over medium-high and add 3 tbsp vegetable oil (enough for shallow frying). Dredge okra in the cornmeal mixture, shaking off excess, then spread in a single layer in the hot oil. Fry 2–3 minutes per side until golden and crisp (work in batches if needed). Transfer to a paper-towel-lined plate to drain.

Prepare and fry the okra

While chicken rests, rinse and dry 6 cups mixed greens. Place 1 cup shredded cabbage in a large bowl with the greens. Halve 1.5 cups cherry tomatoes and slice the 1 cucumber. Drain and rinse 1 cup black beans. Heat a medium skillet over medium-high heat with 1 tsp olive oil (or use the clean pan from the chicken) and add 1 cup corn kernels; cook, stirring occasionally, 5–7 minutes until corn is lightly charred and just tender—season with a pinch of salt. Let the corn cool slightly.

Prepare salad components

In a small bowl or jar combine 1/4 cup olive oil, 2 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tbsp honey, 1/2 tsp smoked paprika, 1 tbsp lime juice, 1/2 tsp salt and 1/4 tsp black pepper. Whisk or shake until emulsified. Taste and adjust salt or acidity as desired.

Whisk the dressing

Toss the mixed greens and shredded cabbage with about half of the dressing (add more to taste) in a large bowl. Arrange dressed greens on a serving platter or divide among 4 plates. Top with sliced marinated chicken, charred corn, black beans, halved tomatoes, cucumber slices, a few tablespoons of pickled red onion, crumbled goat cheese, a sprinkle of candied pecans and several pieces of crispy okra. Serve with lime wedges and pass extra dressing at the table.
