Trim and remove membrane

Pat the ribs dry with paper towels. Flip bone-side up and use a butter knife to loosen the silver skin (membrane) at one end. Grab the membrane with a paper towel and peel it off completely. Trim any excess fat or ragged edges so the ribs lie flat.

Portion

If the rack is very large, cut into 2 racks of ~2 lb each for easier handling and more even cooking. Leave whole pieces for serving by the pound if desired.

Dry Rub

Mix rub

Combine packed brown sugar, paprika, kosher salt, black pepper, chili powder, garlic powder, onion powder, cumin, and cayenne (if using) in a bowl. Whisk until evenly distributed.

Apply binder and rub

Lightly coat both sides of each rack with yellow mustard (this acts as a binder and won’t impart a strong mustard flavor). Sprinkle the dry rub liberally and evenly over both sides, pressing gently so the rub adheres. Use all the rub; a good, visible coating is desirable.

Rest the seasoned ribs

Let the rubbed ribs sit at room temperature for 30 minutes (or refrigerate up to overnight, covered) to let the rub adhere and the meat come closer to room temp before smoking.

Prepare smoker

Preheat your smoker (or set up your grill for indirect heat) to a steady 225°F (107°C). If using chips, soak them 20–30 minutes and drain. Add wood chips or chunks to the smoker/charcoal as recommended by your equipment so you get a steady light smoke.

Place ribs on smoker

Place the racks bone-side down on the smoker grate away from any direct flame. Maintain an internal smoker temperature of 225°F ± 10°F throughout the cook. Add more wood as needed to maintain smoke (small steady bursts of thin blue smoke are ideal).

Binder & Mop / Wrap Liquid

First smoke period (Unwrapped — 3 hours)

Smoke the ribs unwrapped for 3 hours. Every 45–60 minutes, lightly spritz the meat with apple juice to keep the surface moist and encourage formation of a good bark. Avoid over-spritzing; a few quick sprays are sufficient.

Prepare wrap

After 3 hours, lay out two sheets of heavy-duty aluminum foil for each rack. Mix 1/2 cup apple juice (from the 1 cup total), 1/4 cup apple cider vinegar, 2 tablespoons brown sugar (from wrap ingredients), and 4 tablespoons unsalted butter. Place the ribs meat-side up on the foil and spoon the liquid and butter evenly over them, then wrap tightly, sealing edges to prevent leaks.

Second smoke period (Wrapped — 2 hours)

Return the tightly wrapped ribs to the smoker, seam-side up, and cook for 2 hours at 225°F. The foil traps steam and tenderizes the meat during this period.

Finish Sauce (optional)

Final smoke and glaze (Unwrapped — 1 hour)

Carefully unwrap the ribs and pour any accumulated juices back into the foil to save as sauce if desired. Place the unwrapped ribs back on the smoker for 1 hour. For the last 20–30 minutes, baste or brush the ribs with BBQ sauce (mix with honey and a little apple juice if using). Apply a second light coat in the final 5–10 minutes to set the glaze.

Doneness check

Ribs are done when the meat has pulled back from the bones about 1/4–1/2 inch, the internal temperature is typically 195–203°F for very tender ribs, and the rack exhibits a pronounced bend (the 'bend test' — pick up with tongs at one end; it should bend and crack slightly).

Rest and slice

Remove ribs from smoker and let rest, uncovered, for 10–15 minutes. Slice between bones into individual portions and serve with reserved juices or extra BBQ sauce on the side.
