Prepare Rosemary Base

Muddle rosemary

Place the muddling rosemary sprig in a mixing glass or shaker. Add the simple syrup and gently muddle 6–8 times to release oils — don’t over-muddle to avoid bitterness.

Add the grapefruit juice and lime juice to the muddled rosemary, then pour in the New Amsterdam Gin.

Mixing & Chilling

Add 2–3 large ice cubes (or enough to nearly fill) to the shaker. Add the lemon bitters on top.

Shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosty on the outside.

Serve & Garnish

Double strain the cocktail into a chilled coupe or rocks glass over fresh ice (use fine strainer if you want to avoid small rosemary bits).

Express the grapefruit peel over the drink to release oils, then rim the glass with the peel and drop the twist or place the wheel on the rim. Finish by laying the garnish rosemary sprig across the glass (optionally slap it first to further release aromatics).

Serve immediately and note the balance: bright grapefruit and lime upfront with a herbal rosemary finish and a subtle lemon-bitter lift.
