Prepare the Chicken

Marinate the Chicken

In a bowl, mix the cajun seasoning, olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate for at least 30 minutes in the refrigerator.

Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes.

Assemble the Sandwich

Build the Sandwich

Slice the brioche buns in half. Spread sambal mayo on the bottom half of each bun. Layer with lettuce, grilled chicken, aged white cheddar, tomato slices, and dill pickle slices. Top with the other half of the bun.
