Steak Preparation

Cook the Steak

Season the California striploin with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes on each side or until desired doneness. Let it rest before slicing.

Lemon Aioli Preparation

Make the Lemon Aioli

In a bowl, mix mayonnaise, lemon juice, and minced garlic until well combined. Adjust seasoning with salt if necessary.

Beef Jus Preparation

Prepare the Beef Jus

In a saucepan, combine beef stock, red wine, and thyme. Simmer for about 20 minutes until reduced by half. Strain and set aside.

Shallots Preparation

Braised Shallots

In a skillet, melt butter and add shallots. Pour in red wine and simmer until shallots are tender and the sauce is reduced.

Kale Caesar Preparation

Prepare Kale Caesar

In a large bowl, combine chopped kale, Caesar dressing, and grated Parmesan cheese. Toss to coat and top with croutons.

Fries Preparation

Cook the Fries

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the cut potatoes in batches until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

Assembly

Plate the Dish

On a plate, arrange the sliced steak alongside the fries. Drizzle with beef jus and top with braised shallots. Serve with a side of kale Caesar and lemon aioli.
