Pasta Preparation
Make the Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and crack in the eggs.
Roll Out the Dough
After resting, divide the dough into four pieces. Roll each piece out with a pasta machine or a rolling pin to your desired thickness. Cut into linguine strips.
Duck Preparation
Prepare the Duck
Score the skin of the duck breasts in a crisscross pattern without cutting into the meat. Season both sides with smoked sea salt and black pepper.
Rest the Duck
Remove the duck from the skillet and let it rest for at least 5 minutes before slicing.
Sauce Preparation
Make the Sauce
In the same skillet used for the duck, add minced garlic and sauté for 1-2 minutes until fragrant. Pour in the heavy cream and bring to a simmer.
Incorporate Blue Cheese
Add blue cheese to the cream sauce and stir until melted and well combined. Adjust seasoning with salt and pepper to taste.
Finish with Parsley
Stir in the chopped parsley just before serving.
Combining & Serving
Combine Everything
Toss the cooked linguine in the blue cheese sauce, adding a splash of pasta water if needed to loosen the sauce.
