Pasta Dough

Method

Pasta Dough Preparation

1

Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack in the eggs. Mix with a fork until a dough begins to form.

2

Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling Preparation

3

Prepare the Filling

In a mixing bowl, combine ricotta cheese, grated Parmesan, chopped spinach, nutmeg, and black pepper. Mix well until all ingredients are incorporated.

Tortellini Assembly

4

Roll Out the Dough

Divide the rested dough into four pieces. Roll out each piece into a thin sheet using a pasta machine or rolling pin.

5

Cut and Fill the Tortellini

Cut the dough into squares (about 3 inches). Place a teaspoon of filling in the center of each square. Fold diagonally to form a triangle and seal the edges tightly.

6

Shape the Tortellini

Take the two opposite edges of the triangle and bring them together to form the tortellini shape. Press to seal.

Cooking Tortellini

7

Boil the Tortellini

Bring a large pot of salted water to a boil. Add the tortellini and cook for 3-5 minutes until they float to the top and are tender.

Sauce Preparation

8

Make the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a simmer.

9

Finish the Sauce

Stir in chopped basil, salt, and black pepper. Cook for an additional 2-3 minutes.

Protein Addition

10

Add Protein

Choose your desired protein addition (chicken, beef, wild boar sausage, or shrimp) and add to the sauce. Stir to combine.

Serve

11

Plate and Serve

Drain the cooked tortellini and toss with the sauce and protein. Serve hot with additional grated Parmesan on top if desired.
