Chill glassware
Place two tall glasses in the refrigerator or freezer for 5–10 minutes to get them pleasantly chilled while you prepare the soda.
Measure the cedrata (cedar/citrus) syrup or cedrata concentrate. If you have a commercial cedrata syrup (Baladin Cedrata-style), use 1/4 cup (per serving). For this recipe sized to 2 servings, use 1/2 cup total.
Add the fresh lemon juice to the cedrata syrup. The small amount of lemon brightens the flavor and balances sweetness.
If you prefer a sweeter soda, dissolve 1 teaspoon simple syrup into the cedrata + lemon mixture. Stir until homogeneous.
Fill the chilled glasses with ice cubes.
Slowly top each glass with cold carbonated water (about 1 3/4 cups / 420 ml per glass) poured over the back of a spoon or down the side to preserve carbonation and produce a gentle head. Pour to taste but leave about 1/2 inch of headspace.
Gently stir once with a long bar spoon (1–2 slow turns) to combine syrup and soda without flattening the beverage.
