Prepare the Quinoa

Rinse the quinoa under cold water and then cook it according to package instructions, typically by boiling in water for about 15 minutes until fluffy.

Chop the Vegetables

Dice the carrots, zucchini, and bell peppers into small, uniform pieces. Mince the garlic.

Cooking

Cook the Chicken

In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt, pepper, and dried oregano. Cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and let it rest.

Cook the Shrimp

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, then the shrimp. Cook for 2-3 minutes until the shrimp turn pink and opaque. Remove from the skillet.

Sauté the Vegetables

In the same skillet, add the diced carrots, zucchini, and bell peppers. Sauté for about 5-7 minutes until they are tender. Add lemon juice for flavor.

Combine Everything

Slice the cooked chicken and return it to the skillet with the shrimp and sautéed vegetables. Toss everything together and serve over the cooked quinoa.
