Prepare chicken

If breasts are thick, butterfly them or slice horizontally to make 2 thinner cutlets (about 1/2-inch thick). Lightly pound to even thickness if needed.

In a bowl combine buttermilk, garlic powder, onion powder, 1 tsp salt, and 1/2 tsp black pepper. Add chicken, ensuring it is fully coated. Cover and refrigerate for at least 30 minutes, up to 4 hours (longer for more tender chicken).

Set up a dredging station: bowl 1 - flour mixed with paprika and cayenne; bowl 2 - beaten eggs; bowl 3 - crushed corn flakes. Season the crushed corn flakes lightly with a pinch of salt.

Remove each chicken piece from buttermilk, let excess drip off, dredge in flour (shake off excess), dip in beaten eggs, then press firmly into crushed corn flakes to coat completely. Place on a wire rack and let rest 10 minutes so coating adheres.

In a deep skillet or heavy pot, heat vegetable oil to 350°F (175°C). If you don’t have a thermometer, test with a small piece of coating: it should sizzle steadily and brown in ~1 minute. Fry chicken pieces 3–5 minutes per side depending on thickness until golden brown and internal temperature reaches 165°F (74°C). Do not overcrowd; fry in batches if necessary.

Transfer fried chicken to a paper towel–lined tray or wire rack. Let rest 3 minutes. Optionally, while hot, brush lightly with 1 tablespoon of honey for a subtle glaze before assembling (reserve remaining honey for sauce).

In a small bowl, whisk together mayonnaise, gochujang, gochugaru (or smoked paprika), sesame oil, rice vinegar, 1 tablespoon honey, and soy sauce until smooth and emulsified. Taste and adjust heat or sweetness: add more gochujang for spice or honey for sweetness.

Reserve about 2 tablespoons of this spicy mayo to serve with fries or for extra on the sandwich if desired.

Cook fries according to package instructions or: preheat oven to 220°C (425°F). Toss fries with 1 tablespoon vegetable oil and spread in a single layer on a baking sheet. Bake 20–30 minutes, flipping halfway, until golden and crisp. Season immediately with 1 tsp salt. For extra crispness, finish under broiler for 1–2 minutes while watching closely.

Sandwich Build & Finish

Split brioche buns and lightly butter cut sides. Toast in a skillet over medium heat or on a griddle until golden, 1–2 minutes.

Spread about 1.5 tablespoons of the Korean spicy mayo on the bottom bun. Place a small handful (about 1/2 cup) of lettuce on the mayo to create a moisture barrier.

Place the hot corn flake–battered chicken on the lettuce. Drizzle 1 teaspoon honey over the chicken (or brush) to add the honey note from the menu description.

Top the chicken with 4 slices of bread-and-butter pickles (adjust to taste). Spread an additional 1 tablespoon spicy mayo on the top bun and close the sandwich.

Serve the sandwich immediately with fries on the side and extra spicy mayo for dipping.
