Prep

If claws are frozen, thaw overnight in the refrigerator or under cold running water until completely thawed. Rinse the claws under cold water and pat dry with paper towels. Use kitchen shears or a mallet to lightly crack the shells along the backside so diners can access meat easily after cooking; do not fully remove the shell.

Steam (preferred for natural flavor)

In a large pot with a steamer basket, add 500 ml (about 2 cups) of water and 1 tsp Old Bay (optional). Bring the water to a rolling simmer over high heat. Place the crab claws in the steamer basket in a single layer. Cover and steam until heated through, about 6–8 minutes for thawed claws and 10–12 minutes for larger king crab claws. The meat should register hot and opaque.

Make garlic butter

While the claws steam, melt 6 tbs unsalted butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently for 1–1.5 minutes until fragrant but not browned. Pour in the white wine (60 ml) if using and simmer 1–2 minutes to reduce slightly. Remove from heat, stir in 2 tbs lemon juice, 2 tbs chopped parsley, 1 tsp sea salt and 1/2 tsp freshly ground black pepper. Keep warm.

Finish (optional sear)

If you prefer a slightly charred flavor, heat a large skillet or cast-iron pan over high heat with 1 tbs butter or oil. Sear the steamed claws 30–60 seconds per side until edges caramelize lightly. Do not overcook—this step only adds color and flavor.

Serve

Transfer crab claws to a warmed platter. Drizzle some warm garlic butter over the claws and sprinkle the remaining chopped parsley. Serve with lemon wedges and additional melted butter or cocktail sauce at the table. Provide crab crackers or kitchen shears for guests. Consume immediately.

Arrange cocktail sauce and additional drawn butter in small bowls. Offer lemon wedges alongside. For a composed plate, place the claws over a bed of ice for chilled presentation or on a heated platter for hot service.
