Method
Gelato Base Preparation
Combine Milk and Cream
In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is warm but not boiling.
Whisk Egg Yolks and Sugar
In a separate bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and thick.
Cook the Mixture
Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens and coats the back of a spoon, about 10-15 minutes.
Add Flavorings
Remove from heat, stir in 1 teaspoon of vanilla extract and a pinch of salt. Allow the base to cool at room temperature, then refrigerate until chilled.
Chocolate Gelato Preparation
Prepare Chocolate Mixture
Once the gelato base is chilled, stir in 1 cup of cocoa powder and 1 cup of chocolate chips until fully combined.
Churn the Gelato
Pour the chocolate mixture into an ice cream maker and churn according to the manufacturer's instructions until thick and creamy.
Freeze
Transfer the chocolate gelato to an airtight container and freeze for at least 4 hours or until firm.
Strawberry Gelato Preparation
Prepare Strawberry Mixture
Once the gelato base is chilled, blend 2 cups of fresh strawberries and 1 tablespoon of lemon juice in a blender until smooth. Strain through a fine mesh sieve to remove seeds if desired.
Combine with Base
Stir the strawberry puree into the chilled gelato base until well mixed.
Churn the Gelato
Pour the strawberry mixture into an ice cream maker and churn according to the manufacturer's instructions until thick and creamy.
Freeze
Transfer the strawberry gelato to an airtight container and freeze for at least 4 hours or until firm.
