Prepare Home Fries

Dice the potatoes and rinse them. Heat olive oil in a skillet over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.

Cook Bacon

In a separate pan, cook the bacon over medium heat until crispy. Remove and let it drain on a paper towel.

Sauté Vegetables

In the same pan used for bacon, add diced bell pepper and onion. Sauté over medium heat until soft, about 5 minutes.

Scramble Eggs

In a bowl, beat the eggs and add salt and pepper. Pour the eggs into the pan with the sautéed vegetables and cook, stirring gently, until the eggs are just set. Add in the cheddar cheese and mix until melted.

Toast Bread

While the eggs are cooking, toast the slices of bread to your desired level of crispiness.

Assemble the Dish

Place the toasted bread on a plate, top with the egg mixture, and crumble the cooked bacon on top. Serve alongside the home fries.
