Chilled Lobster and Truffle-Dijon Aioli
Method
Preparation and Serving
Cook the Lobster
In a large pot, bring 4 cups of water and 1 tablespoon of salt to a boil.
Add Lobster
Once the water is boiling, carefully add the lobster tails to the pot. Cover and cook for about 6-8 minutes until the shells turn bright red.
Prepare the Aioli
In a mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, 1 tablespoon of truffle oil, 1 minced garlic clove, and black pepper to taste. Whisk until smooth and thoroughly combined.
Split and Serve
Once the lobster tails are cooled, split them down the middle using a sharp knife. Serve chilled with lemon wedges and drizzle the truffle-Dijon aioli on top or on the side for dipping.
