Cook the Bucatini

In a large pot of salted boiling water, cook the bucatini pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Bacon

While the pasta is cooking, cut the double smoked bacon into small pieces and fry them in a skillet over medium heat until crispy. Remove from heat and set aside.

Make the Sauce

In a mixing bowl, combine the egg yolks and grated Pecorino Romano cheese. Mix until smooth. Gradually add reserved pasta water to the mixture until you achieve a creamy consistency.

Combine and Serve

Add the drained bucatini to the skillet with the bacon and toss to combine. Remove from heat and quickly stir in the egg yolk and cheese mixture. Season with black pepper and salt to taste. Serve immediately, garnished with extra Pecorino Romano if desired.
