Focaccia Dough

Making Focaccia

Prepare the Dough

In a large bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 2 hours, until doubled in size.

Shape Focaccia

Preheat the oven to 425°F (220°C). Punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers.

Second Rise

Cover again and let it rise for another 30 minutes.

Bake

Drizzle with olive oil, sprinkle with salt, and bake for 20-25 minutes until golden brown.

Make the Butter

In a bowl, combine softened unsalted butter, grated Pecorino Romano cheese, black pepper, and salt. Mix until well blended and creamy.

Spread the cacio e pepe butter on warm focaccia and enjoy!
